This is one of those recipes that once you have homemade, canned will never taste the same again. Campbell’s who? So fast and easy to throw together – you will want this more often than just when you are sick! Like other veggies? Throw them in too, it can’t hurt! This is also the kind of recipe that is really simple to alter – if you prefer more or less noodles, chicken, or veggies – add or take away as you please. I put mine together in a crock pot and cooked it on low so when I got off work it was ready to go!
3 c. egg noodles
4 c. chicken broth or stock
2-3 celery sticks, sliced
3-4 large carrots, peeled and sliced
3 large chicken breasts, cooked and cubed
1 tsp. dried oregano
1 tsp. dried basil
Salt, to taste
Pepper, to taste
Prepare egg noodles according to package directions; drain. Add remaining ingredients. Simmer 15 minutes, or until veggies are soft.
