These are very similar to the potato bites recipe that I’ve got, but ever so slightly different (this recipe is with red potatoes )! Oh man oh man, these are so simple and the perfect side dish. Hey, have some leftover when dinner is done? Have them for breakfast too!

4 red potatoes
1 tablespoon olive oil
2 tablespoons bread crumbs
1 tablespoon grated Parmesan cheese
Your favorite seasonings (garlic powder, onion powder, seasoned salt, dried parsley, etc.)
Preheat oven to 375 degrees F.
Rinse and scrub potatoes, then slice into wedges and place in a bowl. Toss with the olive oil until coated and then add all of the remaining ingredients and toss until evenly coated. Bake for 30-40 minutes or until desired degree of crispness, turning wedges over halfway through baking.
