
These are very similar to the potato bites recipe that I’ve got, but ever so slightly different (this recipe is with red potatoes
)! Oh man oh man, these are so simple and the perfect side dish. Hey, have some leftover when dinner is done? Have them for breakfast too!

4 red potatoes
1 tablespoon olive oil
2 tablespoons bread crumbs
1 tablespoon grated Parmesan cheese
Your favorite seasonings (garlic powder, onion powder, seasoned salt, dried parsley, etc.)
Preheat oven to 375 degrees F.
Rinse and scrub potatoes, then slice into wedges and place in a bowl. Toss with the olive oil until coated and then add all of the remaining ingredients and toss until evenly coated. Bake for 30-40 minutes or until desired degree of crispness, turning wedges over halfway through baking.

Ok Yvonne I tried these potatoes tonight! They were fabulous! Blake was home from college this weekend and he said they were the best potatoes he has ever had. They were better than french fries! I have to agree! Now that is saying something. What I also noticed that I liked was that they weren’t greasy. The bread crumbs and mozzarella must absorb the oil. These were a hit and I can’t wait to make them for Glenn and Brad! Thanks again for sharing!

I was looking for a good recipe to go with grilled chicken, so I tried these and they were fabulous! I was a little nervous making them because I had guests over, I don’t like trying new recipes for guests but I am SO glad I did! They loved them and so did we!
