Mini German Pancakes

I ran across a blog that had transformed the German Pancakes into a minature version and immediately fell in love with the idea! Mini? Hello, you know I was all over that :) They were just as easy as the larger version I just evenly divided the batter in 12 muffin tins.

1/2-1 stick butter
1 c. milk
6 eggs
1 c. flour
1/2 tsp. salt

Melt butter in a 9×13 pan while oven preheats. Heat oven to 425. In a blender, mix eggs and milk; add flour and salt and blend again. Pour mixture into pan with melted butter. Bake 15-20 minutes. The batter will rise but not run over. Cut in squares and serve as French toast with syrup and powdered sugar.

    How cute are those! I love German pancakes, these would be so cute for a brunch or something.
