Oatmeal Chocolate Chunks Bars // If ever there is a bar recipe that you want, this is the recipe. These Oatmeal Chocolate Chunk Bars are rich, chocolatey, and super soft. They're delicious! | Tried and Tasty Ohmyheck people. These Oatmeal Chocolate Chunk Bars are probably in my top three favorite bars! I wasn’t paying attention, and the original version said to “whisk together dry ingredients” so I did. Flour, soda, sugar and all. THEN I read the rest of the recipe – dang it! Anyhow, they didn’t turn out as they were supposed to but I didn’t give up. I tried them again yesterday afternoon and seriously, there has never been a bar that is such a soft, melty, gooey, chocolaty goodness. Try it for yourself (I adjusted the directions so it’s a little easier to follow), you will see!

Ingredients

  • 1 3/4 c. flour
  • 3/4 tsp. soda
  • 1/4 tsp. salt
  • 1 c. oatmeal
  • 3/4 c. butter softened
  • 1/2 c. sugar
  • 1/2 c. brown sugar
  • 1 egg
  • 1 tsp. vanilla
  • 12 oz. semi sweet chocolate chunks
  • 1 c. chopped walnuts I used finely diced

Instructions

  1. Preheat oven to 375 F.

  2. Whisk together flour, soda, salt and oatmeal in a medium sized bowl; set aside.

  3. Beat together butter, sugars, egg, and vanilla until fluffy.

  4. Add dry ingredients. Stir in chocolate chunks and walnuts.

  5. Press into a greased 9x13 in pan. Bake for 18-20 minutes until light golden brown.
