Sugar Cookies with Buttercream Vanilla Frosting

For our 2nd annual Christmas gift exchange with close friends, Beth made these melt-in-your-mouth treasures! I love me a good sugar cookie, and seriously, these are to die for! They are buttery, smooth, and perfect! The funny thing I learned when making them was… I don’t own a: sifter, rolling pin, or cookie cutters! It’s funny what you realize you don’t have until you need it! Thankfully Beth lives next door and let me borrow her cutters. Neither of us sifted the flour and we each had our own unique way of flattening the dough :0)

2/3 c. shortening
3/4 c. granulated sugar
1 tsp. vanilla
1 egg
4 tsp. milk
2 c. sifted all-purpose flour
1 1/2 tsp baking powder
1/4 tsp salt

Thoroughly cream shortening, sugar, and vanilla. Add egg; beat till light and fluffy. Stir in milk. Sift together dry ingredients; blend into creamed mixture. Divide dough in half. Chill 1 hour. On lightly floured surface, roll to 1/8 inch thickness.* Cut desired shapes with cutters. Bake on greased cookie sheet at 375 about 6-8 minutes. Cool slightly, remove from pan. Makes 2 dozen. *Chill other half till ready to use.

Buttercream Vanilla Frosting:
1/4 c. butter or margarine
1/4 tsp. salt
2 tsp. vanilla
3 c. powdered sugar, sift if lumpy
1/4 c. milk (or less)

Combine butter or margarine, salt, vanilla, and 1 c. of sugar. Add milk and remaining sugar. Add more sugar to thicken or milk to thin, if needed for spreading consistency.
