Crock Pot Beef Stew

Steve and I have been trying to buy a new type of meat each month’s grocery shopping trip, just to switch things up. Stew meat isn’t necessarily a “new” type of meat – but it’s new to us. I was inspired by Ker to make this, she treated me to a Pork stew that was delicious, which made me remember that deep in the freezer I had stew meat of my own! The best part about this is it is a crock pot meal. Prepare it and forget it. Well, with the wonderful smell wafting throughout the apartment it’s hardly easy to “forget” it. I love waking up to a wonderful smelling crock pot meal!

1 pkg. McCormick Seasoning Mix
2 lbs. stew beef, cut into 1-inch cubes
3 tbsp. flour
2 tbsp. oil
3 c. water
3 large potatoes, more or less depending on preference
1/2 large onion
1 celery stalk
5-10 medium carrots

Chop vegetables into small pieces. Prepare stew beef according to directions on McCormick Seasoning mix. Once beef is brought to a boil with seasoning mix, transfer to a crock pot and add vegetables. Cook on low 6-8 hours, or until vegetables are tender. Thicken stew with additional flour, depending on preference.
