This recipe came about when I was trying to alter my original rigatoni recipe because we didn’t have hamburger, which the original recipe calls for. I sort of just made this up and threw it together. One of my dreams in cooking is being able to cook without a recipe. You know, just how mom does? With time I suppose I will be able to. For a glimmering moment, for this recipe I was proud of what I accomplished!

This Rigatoni is an excellent side dish for any of your chicken or beef favorites. Or, add chicken or beef and this will become an excellent main dish. Simple to throw together and delicious!

Ingredients

  • 2 c. rigatoni noodles
  • 1/2 jar Prego spaghetti sauce any flavor
  • 4 oz. cream cheese
  • 1/2 c. mozzarella cheese

Instructions

  1. Preheat oven to 350 F.

  2. Cook noodles according package directions. Set aside, prepare sauce. In a saucepan, mix together the spaghetti sauce with the cream cheese. Melt together until creamy.

  3. Pour over cooked rigatoni noodles in a 9x13 in baking pan and cover with cheese.

  4. Bake for 15-20 minutes until cheese is melted.

Recipe Notes

Alternative serving option: add to sauce 1/2 lb. cooked hamburger with finely chopped cooked onion. Serve with salad and garlic bread.
