Rigatoni

This recipe came about when I was trying to alter my original rigatoni recipe because we didn’t have hamburger, which the original recipe calls for. I sort of just made this up and threw it together. One of my dreams in cooking is being able to cook without a recipe. You know, just how mom does? With time I suppose I will be able to. For a glimmering moment, for this recipe I was proud of what I accomplished!

Rigatoni:
2 c. rigatoni noodles
1/2 jar Prego spaghetti sauce (any flavor)
4 oz. cream cheese
1/2 c. mozzarella cheese

Preheat oven to 350. Cook noodles according package directions. Set aside, prepare sauce. In a saucepan, mix together the Prego spaghetti sauce with the cream cheese. Melt together until creamy. Pour over cooked rigatoni noodles in a 9×13 in baking pan and cover with cheese. Bake for 15-20 minutes until cheese is melted.

Alternative serving option: add to sauce 1/2 lb. cooked hamburger with finely chopped cooked onion. Serve with salad and garlic bread.
