Reese’s Peanut Butter Cookies

I made these for everyone at work and they were such a success, many compliments recieved. I’ve been named one of my supervisor’s designated baker she told me! I think what I love so much about them (other than the fact that they are scrumptious) is they are so little and cute!

My friend, Sharice

1/2 c. butter
1/2 c. peanut butter
1/2 c. sugar
1/2 c. brown sugar
1/2 tsp. vanilla
1 egg
1 1/4 c. flour
3/4 tsp. baking soda
1/2 tsp. salt
1 bag mini Reese’s Peanut Butter Cups

Preheat oven to 375. Combine butter, peanut butter, sugars, vanilla, and egg. Beat until well mixed together. In a medium bowl stir together dry ingredients. Add slowly dry ingredients to the peanut butter mixture. Refrigerate dough for 1 hour. Roll dough into small ball and bake in a mini muffin pan. Bake for 8-9 minutes. Place an unwrapped mini Reese’s PB cup on top of each cookie immediately after they come out of the oven and push them down. Let cool in mini muffin pan, remove and enjoy!

[My 2 Cents]
A fun little addition that I like to add is 1/2 bag of mini chocolate chips. Add them after the dry ingredients have been added to the peanut butter mixture. I’m always looking for something I can add mini chocolate chips to, they are so cute!
