Nachos

Mexican has got to be in my top three favorite ethnic foods to make. I love enchiladas, tacos, burritos, flautas, and nachos! Wendy and I threw these together one day and had to hold back from eating the whole pan by ourselves. You don’t really need a recipe because you can use whatever toppings you want, but sometimes it’s nice to have a guide for what is typically used. These were very yummy!

1/2 bag tortilla chips
1 can refried beans
2 c. shredded cheddar/mozzarella blend cheese
1 can sliced olives
1 c. homemade guacamole
1 large tomato, diced
1/2 c. sour cream

Cover the bottom of a 9×13 baking pan with tortilla chips, top with cheese. Broil for a few minutes on high until cheese is melted. Watch carefully, chips will burn very easily. Once cheese is melted, cover with remaining toppings of your choice. These are a great snack, or even a meal!
