I’m sure you have all seen the banana ice cream craze that’s all over the internet right now BUT I’d like to think I knew about this before the craze! Isn’t that the way it always goes? Everyone thinks they were the FIRST with the idea :) Well. Technically, I have only known of this since the completion of our juice fast last year! The hubs evidently has been indulging in this treat for years. When you are trying to stay away from sugar-loaded treats, turn to this recipe. It’s DIVINE! I mean, who doesn’t love ice cream?
We buy bananas by the boatload. I’m not even kidding you. The cashiers at Costco always give us a funny look as they ring through five or six large bunches. As soon as they turn yellow, we peel them and in the freezer they go. They’ll last us about a month or so and then off to Costco we head for more. I wish we were making banana ice cream with all of them, but 98% of them are for the hubs morning protein shake. Anyway, last year I went off sugar and this was my go-to dessert. I’m seriously thinking long and hard about doing the no sugar thing again, and if/when I do, this will be on stand-by.
2-Ingredient Peanut Butter Banana Ice Cream
A guilt-free peanut butter ice cream treat that will satisfy any sweet tooth!
Ingredients
- 2 frozen bananas
- 4 tbsp. raw unsalted peanuts
Instructions

In a juicer or blender, blend together frozen bananas and peanuts until creamy. Enjoy!

To achieve this wonderfully creamy consistency, we like to use a two step process to make the ice cream. First we run the frozen bananas and the peanuts through our Omega NC800 juicer (side note: we absolutely love the Omega NC800. Having tested about eight different juicers in our household throughout the years, the NC800 has emerged the clear victor. It gets almost every drop of juice possible out of produce, runs at a low RPM (for higher quality juice), is easy to clean, and has an unheard of 25 year warranty. Did I mention it makes pasta and nut butters too?).
Second, we then toss the frozen banana and peanut mixture in our Blendtec and run it on the lowest setting for 5-8 seconds to make this ultra-creamy consistency! Gotta love Blendtec!!

Yeah……nope! For others out there who may want to try it, the Magic Bullet couldn’t handle it. I did cut up the bananas in small pieces before freezing, but the nuts didn’t break up fine enough. I blend frozen fruit all the time for smoothies, but I guess there is liquid being added then too so that it works for them. Good news though, I just ordered the Today’s Special Blendtec from HSN!
